Cimbru Author was born from the desire to cook closer to nature and closer to truth. After years of international experience and building the foundations of Cimbru Food Truck and Cimbru Restaurant, Chef Nicolae Crăciun envisioned a space where creativity could fully follow the rhythm of the seasons.
Here, we focus on Transylvanian terroir, working directly with farmers, foragers, cheesemakers, butchers, brewers, and artisans who share our values. The menu evolves weekly because we allow products and producers to lead the creative process.
The kitchen is serene and focused.
Creativity emerges from discipline and respect for craft. Every ingredient is treated with purpose, every plate carefully balanced in flavour, texture, and design. Transylvanian produce guides everything we do, resulting in dishes that are contemporary, yet true to their origins.
